I don’t really know what to say about this recipe except: try it! now! It’s so easy and so good!
Servings: 30-35 kokosmakroner
Time: 30 minutes
75 g sugar
300 g shredded coconut
1 tsp baking powder
1 tsp vanilla extract
1 tbsp flour
50 g butter
Preheat the oven at 200ºC.
Start by melting the butter so it’s cooled down when you will need it.
Whip the eggs with the sugar. Once you have a smooth mix add all the remaining ingredients except the butter. When you have an even batter, add the butter.
Now make the “kokosmakroner” by making small balls with your hands and place them on a greased oven plate or a plate with baking paper. It’s important to not press the balls so they don’t become too compact.
Bake for 5 minutes on the bottom shelf of the oven.
Then let them cool on a rack but be careful when you move them because they are still soft when they are straight out of the oven.
